Cook Job Description As a Cook for Pizza Inn, you will be responsible for learning the tasks associated with all of the following positions. For each of the positions, you will be expected to:
Have a neat, clean appearance
Follow directions & Pizza Inn Portion Control Chart
Follow all safety and sanitation procedures
Demonstrate guest-oriented focus
Demonstrate teamwork
Communicate to the various departments
Manage equipment effectively
Follow "clean as you go" policy
Keep work area organized & follow 7 steps of phone pro
Demonstrate a sense of urgency
Adhere to food quality standards (freshness, temperature, taste, appearance)
Understand FIFO rotation
Buffet Captain Job Description
Set up the prep area and all equipment needed to prep vegetables for the make table.
Accurately prep all vegetables for the make table, making back-ups, rotating and storing all prepped items.
Check the Pull/Thaw Chart and rotate foods out of the freezer into the walk-in that are needed.
Check Make Table Prep Chart and ready the make table for today's sales - prepping all meats.
Maintain a clean and fresh buffet with plenty of variety.
Label, store and rotate products correctly on buffet.
Maintain buffet bar cleanliness and organization.
Cut Pack Job Responsibilities
Follow “clean as you go” policy.
Sample all products and can describe products.
Identify product abbreviations, plate presentations, product descriptions, and key ingredients for all products.
Cut and Pack all Dine Inn orders, buffet, and delivery.
Explain the importance of minimizing waste and Food Cost.
Complete side work duties.
Open and close station correctly (open, mid-shift, close).
Know additional responsibilities during slow times and mid-lunch dinner.
Pizza Maker Job Requirements
Understand all Portion Control Charts, full and add portions.
Make all Specialty Pizzas correctly.
Use scales for all portioning.
Know all product abbreviations, can read guest checks and/or POS monitors.
Follow Buffet Rotation Chart.
Follow correct baking procedures.
Produce consistent products.
Prepare all specialty items.
Know Shelf Life of products and/or where to locate.
FIFO, flip and fill, and restock products.
Prep/label items correctly.
Explain the importance of minimizing waste and Food Cost.
Complete side work duties.
Open and close station correctly.
Dough Maker Know dough quality and discard/alert manager of issues.
Understand proper procedure for making all dough types.
Understand post mix preps.
Know proper weights of all dough.
Understand how to read par charts.
Label all dough properly.
Produce consistent products.
Demonstrate sense of urgency.
Know Shelf Life of products and/or where to locate.
Complete side work duties.
Open and close station correctly.
Explain the importance of having a correct post mix temperature.
